LAMINGTON

Yet another cake for the chocolate lovers. Vanilla sponge, coated with chocolate sauce and rolled in desiccated coconut. Its an amazing combination. Very simple and not a big task to make this cake.




Ingredients:
For the cake:



All purpose flour-2cup
Baking Soda-1/2 tsp
Powdered Sugar-7 tbsp
Milk-1  1/4 cup
Eggs-2 nos.
Baking powder-2 tsp full
Salt-1/4 tsp
Unsalted butter-125 g
Powdered Sugar-7 tbsp
Milk-1  1/4 cup
Vanilla extract-1 tsp





Method:
·         Sieve the flour add in  baking powder, baking soda and salt  and keep it aside in a large bowl.
·         In another bowl add the  butter and sugar together  beat it till light and fluffy.
·         Add in the eggs one by one and ensure you incorporate well,  infact beat it well after each addition.
·         Add flour and milk alternately.
·         Finally add in the vanilla extract.
·         If  you feel the batter is  thick, add more milk and make it to the perfect  consistency.
·         Pour into a prepared square pan and bake in a pre-heated oven at 180 C/350 F for 35 mins.
·         Let it cool and cut the cake into small 2x2 inch squares.


For the chocolate coating

Fine powdered sugar-3cup
Butter-1  1/2 tbsp
Cocoa powder-3 full tbsp
Water-3/4 cup

Method:
·         Boil water and butter together and  this to the sugar-cocoa mix and stir well .
·         Mix sugar and cocoa powder in a another bowl.

Lets assemble:
·         Take a piece of cake with a fork, dip it into the chocolate coating till well coated.
·         Drain the excess chocolate by lifting the cake piece and  roll this in the desiccated coconut
·         Refrigerated for about 15mintues and its ready to serve.

Its a very soft, yummy and delicious cake!!!
